Sunday morning, hungry and totally unprepared for breakfast. Eeek! So, for the first time since it arrived in my mailbox two weeks ago, I opened Ani's Raw Food Essentials to find some inspiration. Her Raw Food Kitchen was my first ever raw recipe book so I have a bit of a soft spot for her and she has a lot of easy recipes. Success! On page 64 I found her Apple-Nut Porridge.
This required absolutely no prep (i.e. crispy buckwheat, which I am actually going to make today), and uses fairly common ingredients for a raw foodie. Simple, fresh and filling = just what I needed! I made some out of Matthew Kenney's book Everyday Raw last weekend and have been eating them all week - very yummy. Was going to do up a blog about them up today anyway and you provided the inspiration I needed - thank you.
